What’s been your favourite memory or experience working in the restaurant so far? 

Aside from being introduced to all my wonderful team, when I got my promotion to GM- I was delighted! Just a couple of years ago, I had set a goal to move from Ireland to Canada and start in a job that aligned with my ethical values. Then I found Virtuous Pie! This company has allowed me to thrive and given me great insights into the plant-based industry. Seeing the support amongst all the businesses with the same purpose, to promote a healthier and sustainable lifestyle, is really gratifying.

What are you looking forward to doing in your new role?

I look forward to developing our team – we have so many talented people working here. In addition, I am eager to develop our menu based on customer and staff suggestions, find what is missing for the plant-based community and try to accommodate them here in our restaurant. Lastly, I would love to collaborate with more plant-based businesses in Vancouver!

What does living a plant-based lifestyle mean to you?

Living a plant-based lifestyle means being mindful of your impact on the environment with the food that you consume.  I also like to live a sustainable lifestyle where possible – I love to thrift!

What are your go-to Virtuous Pie items?

My favourite pizza on the menu would probably be Pepperoni! I like to add broccoli to it for some greens!

And off-menu, my go-to VP food hack is what I like to call the “Loaded Salad”! I like to mix the “Kale and Squash” salad with Buffalo Cauliflower Wings, Cajun Chicken and Chilli Broccoli. And, of course, a blue cheese drizzle. It is glorious!

What are some fun facts about you?

• I love raw baking – it is so easy to do and so healthy! There are endless quick, simple recipes that I create and like to share with my housemates and my team.
• I have recently been trying to create as much as possible – art is becoming a huge part of my life, in all forms!
• I love to read too – using all the never-ending knowledge available out there to constantly learn and grow!
