MEET THE TEAM | Erica Regehr

Today, we’re excited to get to know Virtuous Pie Chinatown Sous Chef, Erica Regehr.

Erica is our Vancouver Chinatown Day Sous Chef and longest-standing partner with 5 years with the Virtuous Pie family. She holds our kitchen together with her work ethic, positive vibes, and fantastic music taste. Virtuous Pie wouldn’t be the same without her!

What does being plant-based mean to you?

I’ve been vegan since September 2013 (7.5 years), I made the change as a teenager to try and find a diet that worked better for my body. As a result, I became more and more passionate about the other factors of veganism (animals and environment) and will never look back. Working at Virtuous Pie has allowed me to align my daily life with my values and continue to encourage others to try veganism and be a living example of the lifestyle.  

What’s your favourite pizza on the menu?

My all-time favourite pizza was the curry mile. But the Ultraviolet has a permanent spot on the menu for a reason, that it is freaking delicious! Add ranch drizzle and you’ve got one of my go-to lunches.

What about off-menu – any add-on or swap hacks you can recommend to guests?  

If I’m not in the mood for pizza (4 years later that starts to happen… but only a little), I’m ordering a Mac and Cheese skillet adding San Marzano sauce. 

What are you up to when you’re not at Virtuous Pie?

When I’m not at Virtuous Pie I am putting my BFA (Bachelor of Fine Arts; SFU) to work, playing the piano and singing with my music partner Cheryl. Many of us at VP Chinatown are musicians and have a lot of fun choosing the music for the day and having competitions who can sing the highest (it’s me). 

What’s a fun fact people might not know about you?

I’m known at VP Chinatown for my garlic knot skills, making 120+ knots almost every shift. I’ve got it down to a science at this point. Whenever I teach new cooks how to make them I have to assure them that my efficiency took over 3 years to get down and they will get the hang of it.  

Virtuous Pie is in our people. We know that we couldn’t do what we do without our amazing store teams. Our restaurant team members are the people that you see day in and day out – bringing the Virtuous Pie vision to life.
