MAKE THIS AT HOME | MAC + CHEESE

In this edition of Make This At Home, we’re bringing you our most popular classic: Mac + Cheese! 

Use your favourite pasta recipe, or pick up a box from your local grocery store. Then, steam your carrots and potatoes, blend them with the rest of the sauce mix, and thicken with a roux. And that’s it! Add to the pasta you have on hand – we recommend 1 cup of sauce for 1/2 lbs of pasta. 

ROUX

  • 40g vegan butter
  • 40g flour 

SAUCE 

  • 0.4 lbs golden potatoes, 
  • 0.4 lbs golden potatoes, washed + roughly chopped 
  • 0.2 lbs carrots, washed + roughly chopped 
  • 1 + 1/4 cups cashew cream 
  • 1 + 1/4 cups raw cashews 
  • 2 + 1/2 cups water, for soaking 
  • 3/4 cup water, for blending 
  • 1/2 cup water 
  • 1 + 1/2 Tbsp Olive Oil 
  • 2 + 1/2  tsp Kosher Salt 
  • 2 tsp Onion Powder 
  • 2 tsp Garlic Powder 
  • 3 Tbsp Nutritional Yeast 
  • 1 tsp lemon juice 
  • 1 tsp dijon mustard 
  • 1/2  tsp soy sauce 
  • 1/2  tsp smoked paprika 
  • 1 + 1/2 Tbsp Miso Paste 

INSTRUCTIONS

  1. Soak cashews for cashew cream
  2. Rinse cashews from the water it was soaking in
  3. Blend with the rest of the water until you have a smooth and creamy consistency
  4. Steam chopped potatoes + carrots for 15 minutes or until soft
  5. Blend steamed vegetables and all sauce ingredients until smooth
  6. Melt vegan butter in a pot over medium heat and gradually add flour stirring continuously, until paste forms
  7. Gradually add vegetable + sauce mix, whisking until smooth
  8. Bring to a simmer for 10 minutes or until thickened and all the flour is cooked out
  9. Add mixture to cooked pasta, and garnish with parmesan, bacon bits, and parsley.
  10. Enjoy!
