What Makes Our Menu Gluten-Free
In 2016, we opened the first Virtuous Pie location on Main St. in Vancouver, BC. Our goal was to change the way people eat by making their favourite comfort foods plant-based.
Initially, we were making gluten-free dough in-house. It was a lengthy process that left room for cross-contamination. That’s when we joined forces with The Good Flour Co. to create our unique gluten-free crust.
It started with gluten-free pizzas. Then, there were gluten-free desserts.
We currently use the Artisan All-Purpose Baking Flour in our gluten-free chocolate chip cookies, skillet cookies, waffle cones, waffle bowls, and cannoli shells.
While some gluten-free flours can overpower other ingredients in a recipe, the all-purpose flour by The Good Flour Co. adds to our desserts in all of the right ways.
In celebration of six gluten-free years with The Good Flour Co., Chef Hamid Salimian created the Lahmacun Pizza, which ran as a limited-time feature at our Main St. location. Built on our unique gluten-free crust, the Lahmacun Pizza is decorated with an eggplant base, lahmacun spice mix, red onion, tofu feta, fresh basil, black seeds, and lime juice.
